Paneer Bhurji Paratha - Scrambled Cottage Cheese Bread Recipe by Ruchi Bharani [HD]
INGREDIENTS-
butter
steamed carrots & french beans finely chopped
capsicums finely chopped
onion finely chopped
coriander leaves
tomatoes deseeded & finely chopped
red chilli powder
garam masala
sugar
ginger chilli paste
paneer (cottage cheese cubes)
onions cut lengthwise
all purpose flour paste
coriander mint chutney
all purpose flour rotis (maida rotis) or readymade tortillas

METHOD
- Take 1 and 1/2 tbsp. butter and heat it on a round bottom pan. Add the chopped onions once the butter melts.
- Add capsicums, steamed french beans, carrots, deseeded and chopped tomatoes. Saute all the vegetables for 1-2 minutes.
- Add ginger chilli paste, red chilli powder and a little bit of sugar. Sprinkle coriander leaves. Mix well. Let the mixture cook for 1-2 minutes. Don't overcook them.
- Scramble the paneer and add the pieces to the mixture. Mash the mixture a little bit.
- Turn off the flame and add salt as per taste.
- Empty the stuffing mixture in a bowl. Let it cool.
- Spread coriander mint chutney on the centre of the rotis and spread some chopped onions.
- Fill the stuffing mixture in the rotis and seal the edges with the help of all purpose flour paste.
- Heat up butter on a round bottomed pan. Roast the parathas till they show brown spots.
- Chop them into two and serve them with coriander mint chutney.
